I am feeling particularly lazy today. Just that end of the week, lazy kind of feeling. For some reason I have not been sleeping well this week so by the time I woke up this morning I was weary before I even got out of bed. I feel like I am lying awake all night and dozing so it is that half awake kind of feeling. Then around 5am I drop into the heaviest sleep only to be woken by the alarm at 6. I even thought I saw a figure in my hallway last night. I must have been half dreaming as he didn’t spook me but it was real enough for me to ask out loud if I could help him. The fact that he was as tall as the ceiling and looked vaguely like an alien must have been why I didn’t freak out. The only possible answer to an alien like creature in my hallway was of course that it was a dream. Weird sort of dreams and twilight apparitions in my hallway are indicative of how restless my evenings have been and how tired I am today.
I was thinking of my alien in the hallway this morning and it reminded me of a poem that dad used to read to us when we were little. I don’t remember it all or even who wrote it but I do know that it used to terrify me. The end of it was like this: “Last night I saw upon the stair, A little man who wasn’t there, He wasn’t there again today Oh, how I wish he’d go away…” I used to go to bed a nervous wreck after hearing that poem. If I was being read to when I was a wee young thing about a man on the stair who wasn’t there, then no wonder I am seeing tall thin aliens in my hallway when I am 44.
Day 8 of the challenge. These fries were exactly what I felt like late this afternoon. I did a version for the kids without all the spices. Also the Tahini sauce was a little bit on the spicy side for them due to the liberal amount of Tabasco I added so the sauce was all mine! The sauce was actually so good that when I had finished the fries I cut up some carrot so I could finish the rest of it. Lazy Saturday afternoons are simply the best.
Sweet Potato Fries with Spicy Tahini Sauce
Sweet Potato Fries:
1 Sweet Potato
2 Teaspoons salt
1 teaspoon pepper
½ teaspoon paprika
½ teaspoon cayenne pepper
½ teaspoon garlic powder
1 teaspoon oregano
Olive oil
Peel Sweet Potato, then slice relatively thinly, then slice the slices so you have fry sized pieces.
Combine all the spices.
Toss the sweet potato in about a teaspoon of olive oil and the spice mix and make sure evenly mixed.
Lay out on two baking trays with baking paper. Make sure fries are evenly spread so they are separate from each other.
Cook for 20 minutes on approximately 180 degrees then check and turn fries over. Cook for a further 10 – 20 minutes until fries are lovely and crispy.
Spicy Tahini Sauce:
½ cup Tahini
¼ cup water
2 tablespoons lemon juice
2 tablespoons olive oil
2 clove garlic – crushed
Tabasco sauce – quite a few drops
Place all ingredients in a blender and blend thoroughly. You may need to add a little more water depending on the consistency.
