I love the idea of a muesli slice but have given up on looking in the shops due to the oils, coconut, list of weirdo ingredients and everything else they put in them. So, to celebrate summer and the arrival of December, I decided to pull my finger out and make my own muesli slice.
This was super easy, and it is also lovely having my very own muesli slice lying around the kitchen in readiness for a snack. Simple things.
Preheat oven to 180 degrees Celsius.
1 cup rolled oats
½ cup pumpkin seeds
1 cup almonds
½ cup Buckwheat groats
½ cup raisins
½ cup dried cranberries
Combine in bowl.
In processor or blender place 1 cup dried apricots, ½ cup maple syrup and ½ cup water and blend until smooth.
Mix apricot mixture with dry ingredients in bowl. Easier to just use your hands and mix it all up.
Press into your pan. I used a 22cm square loose bottomed tart pan. Lined the bottom with baking paper. Press so mixture is evenly spread.
Bake for 30 minutes in oven. Let rest, then when cool remove from pan and cut into squares.
