I was craving something super pretty today and as I seem to pick up a couple of punnets of strawberries every time I go to the shops, I had visions of a strawberry tart dancing in my head. Even though the kids are heading to their Dad’s for the week, I have my brother-in-law Al coming to stay with me for a few days. He is a little like Tiney in that he acts like a human hoover with any food that I make. So, I made a batch of these to have in the fridge as a treat for Al.
I also just stocked up on dates, nuts and maple syrup at Tenterfield Health, so I had all the ingredients I need. As much as they look ‘fancy’, these were really easy to make and took no time at all. I do so love pretty food.
I have made it to day seven!!! Looking back, these seven recipes over seven days show a week in my life. No wonder I will never be a size 8!!!
I used small fluted loose-bottomed tart tins – about 2 ½ inch in diameter on the bottom
Makes 10 small tarts
Preparation: About 15 minutes + at least four hours soaking time for the cashews
Cooking time: none though allow an hour to set in the fridge
375-gram pitted dates
200-gram raw cashew nuts
1 Tablespoon Almond Meal
2 tablespoons of cacao powder
Process ingredients in processor until forms an almost sticky dough.
Press firmly into the bottom and sides of the tart tins ensuring that evenly spread.
1 cup cashews – soaked for at least four hours
3 Tablespoons Maple Syrup
1 cup cut strawberries
¼ cup almond milk
½ cup water.
¾ teaspoon agar agar powder.
Additional fresh strawberries
Blend cashews, maple syrup, strawberries and almond milk in blender until super smooth.
Combine water and agar agar in a small saucepan, whisk and bring to boil. Immediately reduce heat and cook for 2 minutes on a low heat and continue whisking slowly until agar has dissolved and started to thicken. (Make sure you cook this for two minutes – the cooking process is part of the thickening process.)
Add this mixture to the strawberry cream mixture and blend again until fully combined.
Add mixture to the tart bases and leave in the fridge until set.
Garnish with fresh strawberries.
