Day 7 of my 30 recipes in 30 days challenge – Peanut Butter Bliss Balls.
So happy to get Archie and Rissie and bring them back home today. Now the cottage feels complete and Kevin and Rosie are ecstatic. It was amazing to hear Archie and Rissie’s comments on our return how much the countryside has been transformed by a little rainfall. Our yard was a dust bowl when they left, and in just over a week it is a changed green little world.
I am a little obsessed with the Peanut Butter and Almond Butter that I have got recently from Tenterfield Health. I wanted something quick and easy to make when we got home. I also thought it would be nice to have some treats in the fridge this week. A new bliss ball recipe – it took me a little while to get the consistency right, but the result is well worth it.
Peanut Butter Bliss Balls:
1 cup peanut butter
180 grams of dried pitted dates
1 cup rolled oats
½ cup raw cashew nuts
1 tablespoon cacao powder
½ teaspoon vanilla essence
4 tablespoons of light brown sugar
Put all ingredients in processor and process until mixture comes together as a dough.
Roll into bowls and keep in airtight container in the fridge.
(Makes 26 balls)
