I love this salad dressing. It is good for you as Flax Oil is packed with Omega-3 fats but it also tastes delicious. It is also child-friendly and will convince the fussiest of eaters that vegetables and salad can, in fact, be delicious. When Rissie asked me what we were having for dinner and I told her that we were having a salad she screwed up her little face in disgust. I could imagine her shooting poison darts at my face. But when I told her that we were having a salad with her favourite dressing, her whole demeanour changed and the poison darts disappeared.
The beauty of this dressing is that you can put it on almost anything and a plate of boring easily becomes something tempting. You can tweak it as you go as some people prefer a sweeter dressing or others prefer a hot mustard rather than a mild one. This is a great base. If you make excess keep it in the fridge, just make sure you blend or shake when you want to use it.
We are going away for the weekend and our cupboards are bare and since I loathe grocery shopping with a passion I am putting it off until Sunday. So, I am using all our left-over vegetables and whatever I can find to make dinner of some description. Luckily, I have the ingredients for my dressing so a make do dinner has been transformed!
4 Tablespoons Flax Oil
2 Tablespoons Apple Cider Vinegar
1 Tablespoon Peanut Butter
1 Teaspoon Mild English Mustard
2 Tablespoons Maple Syrup
Blend all ingredients with a hand-held mixer or shake it all together in a jar. Pour over salads or vegetables.
