My daily recipe challenge is continuing as I become ever food obsessed. When I first started looking into vegan food and recipes I was gobsmacked how difficult some of the recipes could be. There seemed to be a conspicuous absence of fruit and vegetables and a hell of a lot of ingredients that sounded like they belonged in a laboratory. Also, some things were so bloody complicated and processed and involved a hell of a lot of deep frying!!! Just because something is vegan, does not make it healthy. Vegan or not, you can still have an unappealing diet if it all gets too hard. I have learnt so much since I first started this process way back in 2013!! I have a few rules that I have developed since then that I try to follow to make a new recipe a success. One of those rules is that I like things to be fast and easy. This one was so easy it as not funny and so bloody yummy! I only soaked my cashews just before we went on our walk so they only needed about 2 hours to be soft enough to add a creamy protein component to this one.
I get my almond milk, cashew nuts and maple syrup from Tenterfield Health, my lovely local health food store.
Mango & Strawberry Smoothie
½ cup raw cashews – soak for a couple of hours
1 cup frozen diced mango and strawberries (I always buy too much fruit when it is in season and keep a stock of cut frozen fruit in the freezer.)
1 cup almond milk
2 tablespoons of maple syrup
Blend all the ingredients until smooth then serve!
