Well, I am continuing to recipe test the exclusive recipes for our Summer Grazing Table attendees and for the FEAST Clubhouse members!
I am such a huge fan of guacamole. It is one of those recipes that are accidentally vegan. It is such a popular plant-based dish, but it is rarely thought of as ‘vegan’ – it is just thought of as popular. It is one of those dishes that is great to take to a BBQ or a gathering, a perfect choice to have as nibbles when enjoying a few drinks. Or serve with some warmed tortilla bread and you have a super easy dinner!!!!
This is another recipe I rarely use a recipe for, so it was a bit of fun today to document this bowl of yumminess!!!
Preparation time: 10 minutes
2 peeled avocados with seeds removed
1 small Spanish onion – peeled and finely diced
Juice from one lime
Zest from one lime
2 tablespoons of sweet chilli sauce
Dozen Cherry tomatoes, halved, quartered and pieces halved again (sixteenths!)
Tablespoon of finely chopped pickled jalapeno peppers
Salt and pepper to season
- Mash the avocado with a fork
- Combine all ingredients and season with salt and pepper.
