One of my all time favourite salads and a version of my favourite salad dressings. Ran out of maple syrup so added Apricot Jam to add some sweetness. Perfect for summer, perfect for anytime! It is also obscenely easy.
Fennel, Pear & Walnut Salad
1 bulb Fennel – cut stalks and base off
3 sticks of celery
2 Pears – make sure they are firm
About a cup of walnuts
Julienne the fennel, celery & pears, add the walnuts and combine in a bowl
4 Tablespoons Flax Oil
2 Tablespoons Apple Cider Vinegar
1 Tablespoon Peanut Butter
1 Teaspoon Yellow Mustard
1 Tablespoons Maple Syrup
2 Tablespoons Apricot jam
Blend all ingredients with a hand held mixer. Pour over the salad and combine well.
