I was weary this morning and all I could think about when I woke was juice. I have either been baking or in a kitchen for the last 2 days and nights and was craving something super healthy and super clean. I was also missing my kids so the thought of making anything apart from a juice was too much for my lonely little soul.
Archie and Rissie have been away for 10 days now and I am counting the minutes until they return. It has been just the three of us for almost four years and my little home does not feel right without them in it. They are not overly loud kids and they are quite small and compact so they don’t take up much room, but without them in it, the house feels too quiet, too big and too clean. In the last 10 days I have not filled the washing machine with a complete load. I have been doing piddly little half washes with my black undies and black leggings and not much else. Sad little single person washes with no brightly coloured children’s clothes to brighten my washing line or my life.
So this morning all I wanted was the best juice in the world. I was so steeped in tragedy that I had little energy for anything else. Luckily a juice does not take too much energy and it has such a clean refreshing taste that it can help lift you out of the pits of despair!
I love juicing. When I want an instant hit of health and energy I tend to use more vegetables. But as it was Sunday morning and I was dwelling on the tragedy of my clothes line I added some extra fruit as a treat. You can juice almost anything when it comes to fruit and vegetables (though things like bananas, pears, avocados and berries belong more in a blender) and it means you are getting an instant hit of health.
2 sticks of celery – chopped
2 carrots – chopped
Handful Kale – chopped
Half a small pineapple – skin removed and chopped
Knuckle of ginger
1 green apple – chopped
Small handful of mint – chopped
Juice all ingredients and enjoy!
