Day 29 of 30 recipes in 30 days
Day 29 and I am starting to do a happy dance as I am almost at the end of my 30 recipes in 30 days challenges. I am very proud of myself for making it to the end, but I also need a little break from food! I did not think that creating a new recipe a day would be quite so all-encompassing but I have found myself thinking about food even more than I normally do. Now when I wake up at 2 am in the morning I am obsessing about what I will make that day!
I made these for Archie and Rissie to have as lunch box fillers for school. I must admit that I contemplated not telling them about them as they were good and sometimes I like to keep the good stuff for myself. However, to stop me from becoming the size of a house, I thought it was better that I share. This one is a keeper.
This recipe also allowed me to use the amazing peanut butter I get from Tenterfield Health. It is obscenely good!
Chocolate & Peanut Butter Brownies
¾ cup of self-raising flour
1/3 cup cacao powder
1 cup caster sugar
Smidge of salt
¼ cup flaked almonds
½ cup almond milk
¼ cup olive oil
6 tablespoons of peanut butter
Line a square tin – 8 x 8 inches and preheat oven to 160 degrees Celsius
Combine all dry ingredients in a bowl.
Combine all wet ingredients (apart from peanut butter in a jug)
Pour the wet ingredients into the bowl with dry ingredients and mix to combine.
When combined add the peanut butter and gently mix but not completely as it is lovely to keep some chunks and swirls of peanut butter in the batter.
Cook for 20 minutes.
Allow to cool completely before removing from tin and cutting into 16 squares.
