I love my breakfast smoothie, primarily as it requires little effort and is tasty as well. It is an easy start to the day and something I don’t even think about. Which is a treat in itself. One thing I have found about pursuing a new lifestyle is it seems to take so much more effort. I know one day it won’t be the case, but it is still something that irks me. I have always loved food, but it never appeared to take as much effort as it does now. It is something that I seem to constantly think about, and it sometimes feels like being a vegan requires so much more energy. So when I find something that I enjoy and it has the added bonus of being simple to prepare it fasts becomes a staple of my day.
So to add to my list of chickpeas in the cupboard I always have frozen bananas in the freezer and my ‘chia fresca’ in the fridge. Every time I go shopping I make sure bananas is on the list, into a ziploc bag I put two sliced bananas and I freeze them. One bag equals one smoothie. Chia Fresca is just my posh way of saying chia seeds soaked in water. That’s what they call it in Mexico and as I would love to be in Mexico, using ‘Chia Fresca’ makes me feel for a moment that I am. I don’t measure any more but probably put about 1/2 cup of chia seeds into a plastic container, add about a cup of water, shake it up and let it sit in the fridge. The chia seeds absorb the water and become like the consistency of rice pudding.
2 frozen sliced bananas
2 Tablespoons Chia Fresca
Handful of sliced fruit – go for whatever is in season – strawberries, peaches, watermelon, blueberries
About 1 cup of Almond Milk
Place all in a blender – you might have to add extra Almond Milk if it is too thick until it becomes a good consistency.
Garnish with a sprig of mint and some blueberries!
Voila – you have the start of breakfast in just a few minutes.
