I was back in the pool again today. 66 laps and an hour and 15 minutes later and I was feeling very proud of myself. I am currently feeling like a machine. A well oiled plant fuelled machine. At the end of this month if I am not feeling like the healthiest person in the whole wide world I will have to slap myself with a large wet mullet and tell myself to snap out of it. Regardless I suspect I will want to celebrate with a very large glass of red wine. I can’t ever imagine myself getting to the point where I don’t fancy a glass of wine occasionally. Funnily enough though I have not craved or missed wine at all. What I do crave and think about constantly is food. Anyone who knows me generally knows that I am a wee bit food obsessed and always hungry. Now it seems to be worse. It could be this challenge of 100% plant based food for 30 days and a new recipe every day. It could be because I am eating better, I need to eat more. Who knows, I am not going to analyse it, I am just going to go with it. And if it results in 30 new recipes that I am happy with, then I will be a happy little camper regardless.
Day 10 of the challenge. With the warmer weather I love lighter foods and lots of liquid. I bought heaps of mangoes on the weekend as Archie and Rissie love them and they are one of my favourite treats. I have waxed lyrical about mangoes before. They, taste for me like summer. I am pretty fussy about my mangoes though because as soon as they are slightly soft, or get that sinewy effect I cannot eat them. It is like overripe bananas – they make me gag. So as soon as I see a sign of squishiness in either I cut them up, put them into a Ziploc bag and freeze them. They make for absolutely heavenly smoothies which was my treat to celebrate 66 laps!
Banana & Mango Smoothie
2 Frozen Bananas
Flesh of one frozen mango
Enough freshly made juice to allow the smoothie to blend
Place bananas and mango in the vitamiser and then add enough juice to allow the smoothie to blend (I made up some orange, carrot and apple juice, mostly sticking with the orange theme). Blend until smooth, no need for garnish. Drink and enjoy
